REHIS Controlling the Risk of Cross Contamination Training

This course is aimed at managers and supervisors of food businesses of all sizes, where both raw and ready to eat foods are handled. It is also an excellent refresher course for holders of the REHIS Intermediate Food Hygiene Certificate.

Ideally candidates should already hold the REHIS Intermediate Food Hygiene Certificate or equivalent. The course focuses on microbiological cross contamination and how it can be prevented and controlled.

Guidance for Food Businesses

The Food Standards Agency has issued guidance for food businesses to clarify the steps needed to control the risk of food becoming contaminated by E.coli O157. This guidance has been developed in response to the serious outbreaks of E.coli O157 in Scotland in 1996 and Wales in 2005, which were attributed to cross-contamination arising from poor handling of food.

Although E.coli is the key focus of this guidance, the measures outlined will also help in the control of other bacteria, such as campylobacter and salmonella.

A good way to minimise the risks of cross-contamination to your business. At the end of the course there is a short assessment with the successful applicants being awarded the REHIS certificate.

The course runs from 9.30am – 5pm at the end of which candidates are awarded the REHIS certificate. The minimum training time prescribed for this course by REHIS is six hours. The maximum number of delegates on a course is fifteen.
